Easy Taco Soup Recipe
An Easy Taco Soup Recipe that comes together in just 30 minutes. This hearty soup is loaded with ground beef, tomatoes, corn and beans with a homemade taco seasoning. This recipe has similar ingredients to chili but is filled with all the favorites you’d get in a taco.
Like our Beef Chili, this is the perfect bowl of comfort for cooler weather!

Taco Soup Recipe:
We love all foods Mexican around here. From shrimp fajitas, to classic beef tacos or even ceviche, Mexican-inspired recipes are always on rotation. This taco soup is a great substitute for Taco Tuesday when you want tacos yet something hot. The ground beef combined with corn, peppers and tomatoes, loaded with beans for protein is such a great combination of flavors.
How to Make Taco Soup
- TACO SEASONING– Prepare homemade taco seasoning (see ingredients below), or use a store-bought seasoning and season to taste
- MEAT- Sauté the ground beef in a Dutch oven or large pot with a heavy bottom. Frequently stir and break up the meat as it’s being cooked. Lightly season the meat and mix well.
- VEGETABLE- While the meat is sautéing, finely chop the onion and cube the tomatoes and peppers. NOTE: You can substitute the fresh tomatoes for canned diced tomatoes with or without chili, depending on how spicy you want the soup to be.
- SIMMER- Once the meat is sautéed, add in the tomatoes, peppers, corn, drained beans, broth and seasonings. Turn soup to low and cook 12-15 minutes.
Can I Substitute the Meat?
We prefer the flavor of the beef for classic taco soup, but you can successfully substitute the ground turkey for ground turkey or ground pork.
Tips for the BEST Taco Soup
- If you enjoy your food spicy, add in chopped jalapenos to taste with the remaining ingredients.
- You can add the onion, green and red pepper as the meat is cooked if you want the ingredients to all to be really tender.
- If you don’t have both green and red peppers, you can just use one whole green or red pepper.
- The beans may be added with the remaining ingredients if you want them soft. However, you can add them 5 minutes before the soup is done cooking if you just want to have them hold firm.
- This soup turns out hearty. Add more broth than the indicated amount if you prefer to have more liquid in the soup.
How to Serve Taco Soup?
Just like with tacos, you can change up the toppings for the taco soup with personal favorites. All the favorite toppings you’d add to a good taco can with the soup (well, minus lettuce, that would be weird, ha!). The toppings may be served in individual bowls on the table allowing your family to top their soup as they like it, just like you would tacos. We really enjoy serving this with:
- Tortilla chips or crushed Doritos
- A dollop of sour cream
- Diced avocado,
- Cheddar or Mexican cheese
- Fresh cilantro
TIP: If you like heat, add some hot sauce or Sriracha to the soup.

Easy Taco Soup Recipe

The easiest homemade taco soup recipe loaded with ground beef, beans, corn, pepper and tomatoes with a homemade taco seasoning. Top soup with avocado, cheese, sour cream and tortilla chips.
Ingredients
Taco Soup:
- 1 pound lean ground beef
- 1 Tbsp oil, sautéing
- 1 small onion, finely diced
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- 16 oz can beans, drained , (kidney or pinto)
- 1 cup corn
- 1 1/2 cups diced tomatoes, diced
- 3 garlic cloves, minced
- 2 cups beef broth
Taco Seasoning:
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1 Tbsp chili powder
- 1 tsp salt
- ½ tsp ground pepper
- ¼ tsp red pepper flakes
- ½ tsp oregano
Instructions

Combine the ingredients for the taco seasoning.

In a Dutch oven, heat oil. Once hot, sauté ground meat breaking it up as it’s cooked, lightly season with the taco seasoning.

Meanwhile, finely chop the onion. Cube the red pepper, green pepper and tomatoes.

Once the meat is browned, add the remaining ingredients and seasonings. Turn heat to low and cook 12-15 minutes. Serve soup hot with desired toppings.

Hi Marina, in the winter, I use canned corn and in summer this is even better with freshly cooked corn on the cob. You can use store-bought taco seasoning. That is what I use.

Just made this recipe for dinner tonight in extremely chilly Florida! It is delicious! We loved it! Only thing I changed was using canned tomatoes instead of fresh because I didn’t have any fresh. Still wonderful! A comforting soup for cold days!

I made this last night with the left over chicken from our roasted chicken. I made the stock the day before, skimmed the fat, shredded the chicken and used both instead of ground beef and beef broth. Garnished with crumbled corn chips, cilantro, and Mexican cheese. So warm and yummy on a cold mountain night. My teenagers even gave it a 95% yummy!

Brown the ground beef on the stovetop; add to slow cooker, add the seasonings; then proceed as directed in the recipe.
I make this in crockpot all the time and just brown my beef first.

Are the diced tomatoes fresh or canned?
Hi Ellen, fresh diced but you can substitute the fresh tomatoes for canned diced tomatoes with or without chili, depending on how spicy you want the soup to be.
What is the measurement for one serving?
Hi Emily, The serving size can be found at the beginning of the print-friendly recipe card (located at the bottom of the recipe post). The nutrition label shows counts “per serving.” You can adjust that by clicking on the serving size and using the slider. I hope that helps!
Wondering if the diced tomatoes can be substituted for tomato sauce? I’m not a fan of chunky tomatoes. Thanks so much !!
Hi Kayla, I haven’t tested that substitution, but tomato sauce would give this a thicker and more saucy consistency and would also change the flavor.
Kayla, my kids don’t like tomato chunks either. I tend to use crushed canned tomatoes. You don’t get additional flavourings like with sauce. I freeze any leftover crushed tomatoes for future recipes. I hope that helps. Great recipe Natasha! My family loves your borscht, too.
Natasha. I made the taco soup, and by not using all of the seasoning, it was way to spicy, without throwing it out, do you know of a way I can still use it. I hate to add more hamburger and still may have to throw it out. Thanks
Hi Amanda, using the seasonings listed, it should be pretty mild, but if you add too much spicy, you could add more broth to tone down the spiciness.
🌟🌟🌟🌟🌟…I made a vegan version of this recipe and it was delicious. I love your taco seasoning and it complimented the Gardein beef less ground crumbles beautifully. I also used Vegetable Better than bouillon for the vegetable broth and substituted black beans for the pinto beans. Everything else remained the same. It was delicious and a new go to for my family. What yummy soup! I used 99% fat free ground turkey instead of the ground beef. I only had a red pepper and used a combination of pinto and black beans, but no matter. We’ll be having this again!

Quick and easy and so flavorful. I used the pinto beans and I added (just our preference) some rotel tomatoes and green chilies to add an extra kick. This makes a great lunch or light dinner.

What a fantastic belly warming soup this is, and a hearty one at that. This is pure comfort food.
I made this in the instant pot. First I pressed the saute button and warmed the oil for about 20 seconds. I browned the meat along with the peppers and onions. Then I mixed together the seasoning ingredients and stirred it in the meat mixture. I added the remaining soup ingredients and screwed on the lid. I pressed the soup stew button and set the sealing valve to seal. Once the pot beeped I turned it off and did a quick release. This worked perfectly!!! I topped my bowl of soup with shredded cheese, corn tortilla strips and slices of avocado. This recipe will be added to our regular recipe rotation.

Hi Natasha, could you clarify for me please, When you say In the ingredients, Beef Broth, I take it that you mean Beef stock?, In the UK beef broth would mean stew or soup.
Hi Carol, they are used interchangeably in the US but I do mean beef stock (not stew or soup).

Hi Trudy, we use the full amount of the taco seasoning in the recipe card. I would suggest adding a store-bought one to taste since they can vary in salt and spice content.

This one was a winner for sure! My veeeery slow 3 year old eater gobbled this up in 15 minutes (he normally takes over an hour to eat). I even got a “it’s pretty good” from my husband, versus the usual “eh”. We added some crushed chili Fritos, sour cream and cheese on top. I’ll definitely make this again!
