How to Make Beef and Broccoli:
This recipe moves fast and comes together in 1 skillet, so you want to have all of your ingredients prepped and ready to go before you fire up the stove. It is just 6 steps in one skillet!
- Slice beef strips
- Make stir fry sauce
- Cook broccoli and remove from pan.
- Cook beef
- Add stir fry sauce
- Return broccoli to the pan
The Best Beef and Broccoli Sauce:
Many stir fry recipes have gone wrong with a poorly made sauce. We tested this recipe over and over until we arrived at the perfect balance of sweet and savory. For the best stir fry sauce:
- Use low sodium soy sauce (or Gluten Free Tamari)
- Use the right amount of fresh ginger – it has strong flavor so don’t overdo it.
- Do not skip the sesame oil as it gives authentic flavor
- Simmer sauce at least 3 minutes to mellow out garlic and ginger
- For a thinner sauce, add 2 Tbsp water at the end
How to Ensure Tender Beef?
The right cut (see list above) can make all the difference in a stir fry. Here are our best tips to achieve tender beef:
- Freeze steak 30 minutes for easier slicing
- Use a sharp knife to cut super thin slices against the grain
- Add steak to a HOT skillet to sear and seal in juices
- Don’t overcrowd the pan or it cools quickly and will steam cook
Can I Make Beef and Broccoli Ahead?
This saucy beef and broccoli recipe reheats really well so it’s perfect for weekly meal prep and to-go lunches for school and work. The protein and nutrients found in beef give you and your family the strength and energy you need to get through the busy school season.
For meal prep: add cooled rice to a heat-safe container and top with the Beef Broccoli Stir Fry, then cover and refrigerate until ready to heat and serve (Beef and Broccoli can be refrigerated up to 4 days).
How to Pack a Hot Thermos:
Pack a hot thermos in the morning and it will be warm at lunchtime. A hot thermos can keep food hot for 5 hours before it’s eaten, and this Broccoli Beef is the Best. School. Lunch. Ever!
- Heat the thermos first by filling 3/4 full with boiling water (do not overfill), cover with lid and let sit 5 min and drain just before adding food.
- Meanwhile, heat food to 165˚F. Place into the heated thermos and close with lid.

Beef and Broccoli Recipe

Beef and Broccoli is an easy, 1-pan, 30-minute meal that is loaded with fresh broccoli, tender nutrition-packed beef, and the best stir fry sauce. We love this over steamy white rice.
Ingredients
Beef and Broccoli Ingredients:
- 1 lb flank steak, very thinly sliced into bite-sized strips
- 2 Tbsp olive oil , (or vegetable oil), divided
- 1 lb broccoli, (cut into 6 cups of florets)
- 2 tsp sesame seeds, optional garnish
Stir Fry Sauce Ingredients:
- 1 tsp fresh ginger, grated (loosely packed)
- 2 tsp garlic, grated (from 3 cloves)
- 1/2 cup hot water
- 6 Tbsp low sodium soy sauce, (or GF Tamari)
- 3 Tbsp packed light brown sugar
- 1 1/2 Tbsp corn starch
- 1/4 tsp black pepper
- 2 Tbsp sesame oil
Instructions

Prep: Start cooking white rice first so it's ready when the stir fry is done. Cover and freeze steak 30 minutes for easier slicing.

Combine all stir fry sauce ingredients in a bowl, stir well to dissolve the sugar, and set aside.

Place a large skillet over medium heat and add 1 Tbsp oil. Add broccoli florets and sauté 4-5 minutes, partially covered with lid, stirring or tossing several times until broccoli is bright green and crisp-tender then remove from pan. Tip: If you prefer softer broccoli, add 2 Tbsp water before covering with the lid and it will steam cook the broccoli.

Increase heat to high heat and add 1 Tbsp oil. Add beef in a single layer and sauté 2 minutes per side or just until cooked through. Quickly pull out a piece to test for doneness.

Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. It will thicken. Add broccoli and stir to combine. Stir in 1-2 Tbsp water to thin the sauce if desired. Serve over white rice.

I’ve been making beef & broccoli for years with a recipe I picked up when I lived in Australia. Now that we’re in Panama, we can’t get the meat I normally used which was flank steak. It’s not a cut available here so we use tenderloin which is inexpensive here. Can’t get tri tip either. I want to try your recipe. What do you think about using tenderloin? Our beef here is grass fed and very tender for the most part. I also add un-roasted and unsalted cashews which add a nice bit of crunch. Also mushrooms. I’m going to make your recipe tonight. Hi Steve, while I haven’t tried that, I bet that could work! HEre’s what one of my readers wrote: “I had some excess frozen trimmings from a full beef tenderloin I had previously cut into steaks. I sliced thin and followed the same steps. Awesome recipe followed exactly! So good in fact I tried it again with a frozen boneless chicken breast. Same deal- slice the chicken thin before it fully thaws to easily get the thin slices.” I hope this is helpful!

I never leave reviews, but this meal is honestly delicious, a much healthier version of Chinese takeout, and it’s very hard to mess it up. I’ve made it about 5 times and it always turns out amazing, including the first time. I always add more veggies, and here I usually add onion slices and red pepper and a pinch of cayenne. One time I used thinly sliced chicken breast instead of beef and it was amazing too. It has become one of our weekly dishes! Thank you Natasha 🙂

That is the best when kids love what we moms make. That’s so great!
I almost want to double the sauce next time. I added one onion quartered long ways to kinda mix things up. If you use frozen steam in bag broccoli like I did, only microwave it half the time before proceeding as normal. My beef cooked off some liquid so I got rid of that before proceeding. I added a small pinch of red pepper flake. I bet some baby corn, water chestnuts, and thin sliced carrot would be good also. If you make 2 bags of broccoli and a lot of beef like me, you may want to double the sauce. It was ok, but it almost has too much sesame oil.

Oh my goodness this Beef Broccoli was delicious!!! The only thing I changed was using my zester instead of grating the ginger & garlic because I don’t like stringy pieces of ginger. My husband loved it as well. Thank You for such a wonderful recipe.

Didn’t have broccoli or beef so I used chicken and green beans . Used tamari and chopped sushi ginger. Doubled the sauce ingredients except for soy sauce. Yummm. Tastes just like the Chinese restaurant.

I’ve made this recipe and Natasha’s Chicken Broccoli Stir Fry recipe and loved them both! I am curious about one difference in approach between the two recipes.. The Beef Broccoli recipe instructs cook the veggies first, then the meat second. The Chicken version cooks the meat first, then the veggies second. Is there a reason for the order between beef vs chicken? Does it matter? Just curious for my learning. And thank you for showing how to use fresh ginger!
Hi Brad! I’m happy you enjoy these recipes. You’re very welcome! The beef is cut thinly, therefore, it cooks very quickly and could become tough if we reversed the method and waited for the veggies to finish.
I love your recipes and find that we often want to add them to our menu of things we want to cook. The one thing I wish is that when I pin it and put on my want to cook again list, it would be helpful if the picture had a name of what the dish is. This is delicious. I followed the recipe exactly and the broccoli and sauce were especially good. Somehow my beef tough. I was really careful not to over cook it. I cut it very thin and I wondered if it’s possible for it to be too thin? Otherwise fantastic and so easy and quick! Thank you!
That could be, maybe experiment with it next time, sear it less so it does not overcook.
All beef will cook differently. As the laziest possible option: I used stew beef, straight out the freezer frozen into a 1lb block, air fried it to thaw, broke it apart and seared it in the air fryer for a crisp outside but only about med-rare inside, cut it up with shears into smaller pieces (frokable sized chunks) put THAT into the Insta and cooked that per the recipe (10/10). Meanwhile, cooked the (lightly oiled) broccoli in the air fryer until soft but not crispy. Everything finished at the same time to add the conrstarch and thicken while i popped in the broccoli. Point? the stew beef is some of the toughest meat out there but by mechanically “digesting” it” beforehand – cook, cut, pressure cook, I was able to get in minutes what would have taken a lot longer otherwise. If I had steak? No way that would have been necessary, know what you’re cooking with and know how to cheat (without grandmas meat tenderizing hammer)
If you velvet your meat first (baking soda + water), your beef will stay tender.

Hi Jessica, I think that would work fine. One of my other readers said they used frozen broccoli but cooked it separately before adding it in towards the end. I would steam or sautee the broccoli. I hope that helps.

I made this before and am gathering ingredients to make again. Will double sauce this time. Made a second sauce batch after the fact because it really makes the meal. The meat I use is deer back strap. Excellent meal.

This is so delicious! To stay in my beef budget I used chuck steak and it worked very well. I julienned some sweet peppers I had in the frig and tossed them in with the broccoli. The sauce was so wonderful. I omitted the sesame oil because I don’t like it and in place I added 2 T of Thai sweet chili sauce. This was delicious! The tip about freezing the meat for a while to help get thin slices worked perfectly. We are not big fans of broccoli so I used snow peas and thinly sliced bell pepper. Our 12 years old said “this is so good. We HAVE to have this again”. I didn’t even eat the rice because the beef and veggies in the sauce were so yummy!

I just made this tonight. It came out really well and very similar to what we’d expect at a restaurant. The sauce came out a bit thicker than I wanted, so I added a little water at the end to loosen things up, which did the trick. I think next time I would use 1 T corn starch instead of 1.5 T. I added a couple of Thai chilis for some heat, which worked nicely, and some carrots.

I made this recipe for the first time and I have to say the sauce was delicious! My only issue was that the beef was tough. I couldn’t find flank steak so I used London Broil which was supposed to be close to the same as flank steak. Any suggestions?

Was a little hesitant about making this dish because I thought I wouldn’t like it. It was super yummy! Used wagyu steak strips & I did double the sauce because I thought it wouldn’t be enough but I probably didn’t have to. Better than take out or any beef & broccoli dish I’ve had from a restaurant. Will be making it again & again! I’ll also be checking out other recipes.

Made this last night. It was a huge hit. I’d recommend doubling the sauce. I had 1.5 lbs of meat and it took all the amazing sauce! Yummy!

When I went to sauté the meat, halfway through cooking, their was a lot of liquid and it was more like boiling it. Don’t know what I did wrong.
Hi Wilene, it sounds like you had too much beef for the size pan used. When the chicken is crowded, it boils out the juices instead of searing it. I recommend either using a larger pan or cooking the beef in batches. I hope this is helpful!

Just made this tonight and the sauce was delicious. Tasted better than take out and there was xtra sauce for the rice. I did add a little oyster sauce in place of some of the soy sauce but that’s the only sub I made.

This recipe is absolutely amazing! The only three things things I did differently was using hot beef stock instead of hot water, added red pepper, and I did not freeze the flank steak. If you buy fresh, good quality flank steak and own a very sharp knife, freezing beforehand isn’t necessary. I did double the recipe, and there were no issues at all. For a side dish, I made an Asian cucumber salad. I definitely recommend watching Natasha’s video before doing anything. It is super helpful and shows you the importance of having everything prepped before placing anything into the pan. Thank you so much for this recipe, Natasha! 🙂

This was delicious. Used broccolini because it looked better at the store than the broccoli. Left the sauce thick and gooey (did not add the water) and loved it that way. Will definitely make it again!

What gives this dish a the high carb content?

I subbed golden monkfruit sweetener for the brown sugar and used xanthan gum instead of cornstarch, served with cauliflower rice because we’re trying to eat keto/low carb, and it was SO GOOD! I will for sure make this again, and I’m looking forward to trying more of Natash’s recipes.” I hope that helps!
Delicious!! I used moose meat instead of beef, beef broth instead of the hot water and added little bit of the sauce while cooking the meat. Boyfriend absolutely loved it as did I. Will be making this recipe again.

This was fantastic. The only thing I ended up changing after a bit of experimentation was replacing the hot water in the sauce with some low sodium beef stock. Small touch that really amps up the beef flavor if that’s your jam!

Darn fine recipe!!!! Better than the best restaurant says theirs is ! My son who never compliments my cooking said this was the best meal in 10 years I made for him 😊. I used Trader Joe’s balsamic rosemary beef tips which I rinsed prior to putting in the pan and it absorbed the best sauce and was sooo tender! Will be using this recipe again!!!!

This was not “a quick and easy 30 minute dinner”. The prep alone took at least 30 minutes. That saying, if you have the time, this is delicious.

Natasha, I have made many many of your dishes. They are AMAZING. I love how quick easy they are. and your ingredients are not the “hard to find” kind. I have made this recipe a few times now (with a few tweaks) and it is absolutely wonderful. I’ve always been an extra sauce kinda person. So I doubled the sauce ingredients. Not the ginger/garlic. Only used about 3 TBS of sesame oil. I also steamed the broccoli first. Then Added it all the meat once it was cooked. SO GOOD!!! THANK YOU!! You are AWESOME!!

I really enjoy this recipe, however there are some things I change to really get that favorite Chinese restaurant dish to it.
First is velveting the beef – this is a traditional method of tenderizing meat that will give you those tender and silky pieces.
Secondly is adding a lot more garlic, as well as a bit of sriracha if you like more flavor complexity and heat.
Thirdly is about half the sugar is enough. I find this recipe to be way to sweet.

I think I put in to much cornstarch case mine came out too think any hints I put in 1 cup 1/2 cornstarch

Hi Natacha, I haven’t experimented with anything else, but honey would probably be the next best thing, just add it to taste since honey is sweeter than brown sugar cup for cup.
